Our Greek Fiesta Kitchen prepares healthy, fresh, authentic foods daily. You’ll be delighted with our authentic flavors and traditionally prepared recipes.

We are famous for our char-grilled kabobs:  they are prepared fresh daily in our kitchen and marinated overnight in our special Greek Fiesta blend of spices.

Chicken Breast KabobWe use fresh North Carolina raised chicken breast. It is carefully marinated with our own special blends of spices and condiments, then grilled superbly for a taste that you’ll love!

Authentic Lamb KabobWe use a centuries old traditional recipe that blends ground lamb and steak just right. It is mildly spiced and charbroiled to perfection, tender and delicious.

Original Gyro: We carefully grill pre-cut gyro slices and serve them with our tasty home-made Cucumber Sauce; a timeless classic Greek favorite.

Steak Kabob: Our steak kabob is prepared daily from a fine tender cut of beef, marinated overnight in our authentic recipe and grilled to order.

 

We prepare the following items from scratch in our kitchen daily.

Cucumber Sauce: Everyone loves our freshly prepared cucumber sauce that complements our entire menu nicely; cool and always refreshing.

Hummus: This famous heart-healthy dish is one of our specialities. We blend chickpeas (garbanzo beans) with tahini (sesame paste), olive oil, lemon, garlic and  our special mix of spices. Smooth and delicious with hot grilled pita- a crowd-pleaser.

Hand-Cut Fries: We hand-cut and double fry Idaho potatoes in peanut oil for a fresh crisp taste. It’s a healthier alternative to frozen fries. Our customers love it with our secret Greek Fiesta seasoning.

Basmati Rice: We love the aromatic flavor of this rice. We cook it with chicken broth, vegetable oil, and spices.

Apollo’s Sweetened Iced Tea: This is no ordinary sweet tea! It is freshly brewed and infused with pineapple and lemon; tasty and refreshing. Our customers rave about it.

Fresh Greek Salad: There are many different recipes for this salad. We make ours daily with the freshest ingredients: romaine and iceberg lettuces, tomatoes, shredded carrots and red cabbage, cucumbers, feta cheese, Kalamata olives, pepperoncinis. We dress it with our house-made, light Greek vinaigrette dressing. Always fresh, always healthy.

 

Here are some of the other items we serve in our restaurants.

Stuffed Grape Leaves: Grape leaves come pickled for that perfect flavor and consistency, wrapped with freshly cooked rice and served with traditional flavorings.

Falafel: This is a fried vegetarian patty made from chickpeas and spices. It is known all over the world. We lightly fry our falafel in peanut oil and serve it with spicy pepper relish.

Baklava: It is a sweet pastry with dozens of layers of filo dough. It is filled with nuts, soaked in syrup. Our version is very light and delicious. We serve pistachio and walnut baklava, and lady fingers with cashew nuts.

Grilled Grecian Pita: Our pita is hand-made, served popping hot, crispy on the outside, soft on the inside. Perfect with anything on our menu.

Feta: This soft, white brine Greek cheese has a mild, tangy flavor. Feta is what makes a Greek salad Greek. We serve it on salads, fries, in burgers and in pita sandwiches, and as a side.

Kalamata Olives: These Greek olives are meaty and tasty. Pits aren’t removed.

Pepperoncini: Pickled little green peppers, usually from Eastern Anatolia, is a great complement to our salads and platters.
